Method

Brown chicken pieces; remove. Cook bacon, then onions and mushrooms. Return chicken; add red wine, stock, thyme, bay leaf. Braise covered ~1 hour until tender.

Tip

Use a wine you'd actually drink — bad wine doesn't hide in long cooks.
