Method

Sauté mushrooms separately. In another pan: shallot in butter, then rice, then wine, then warm stock added a ladle at a time, stirring until rice is creamy. Stir in butter, parmesan, mushrooms, thyme.

Tip

Keep the stock hot — adding cold liquid stops the cook and makes the rice gummy.
