Method

Pat dry; salt generously inside and out. Stuff cavity with lemon halves, herb sprigs, garlic. Rub with butter. Roast at 425°F until thigh reads 165°F internal, about 60–75 minutes.

Tip

Rest 10–15 minutes before carving so the juices settle.
